Responsibilities Prepares and cooks a variety of menu items. Working alone or with the assistant of a higher-grade cook or supervisor, prepares a variety of foods and desserts according to menu requirements. Adjusts recipes for larger or smaller quantities. Follows recipes to prepare items such as soups, stews, casseroles, gravies, sauces, hot cereals, meatloaf, meatballs, croquettes. Roasts variety of meats such as beef, pork, lamb, veal, fish and poultry. Grills, deep fries, broils and steams foods. Apportions foods for family style servings as well as for plate service. Prepares vegetables, cold food platters, eggs in a variety of ways, French toast, pancakes and crepes. Checks food for appropriate preparation, temperature, and packaging. Follows health and safety precautions to ensure safe preparation and storage of food items. Picks up items for menu rotation, rotating food inventories as appropriate. Takes inventory to determine ordering requirements. Operates kitchen equipment designed to cook and mix food items. Uses, cleans and maintains power kitchen equipment. Keeps working area clean in accordance with standard sanitation requirements. Performs other duties as assigned. Requirements Conditions of Employment Qualifications 1. A minimum of 6 months work experience preparing a variety of menu items including regular and special diet entrees and dessert items fairly independently (without more than normal supervision) in addition to skill in working with professional kitchen appliances and equipment. 2. Ability to communicate (verbal and written) in English. This experience must be reflected on your resume to be considered eligible for this position. Skill and Knowledge: Basic knowledge of food preparation principles and practical understanding of the physical processes that occur in cooking. Knowledge of proper cooking temperatures and preparation methods for a variety of foods. Ability to scheduled and coordinate preparation of a number of different foods in order to ensure that they are ready for service at the appropriate mealtime. Knowledge of food borne illnesses, food safety and proper storage methods for hot and cold food items in order to prevent loss or illness due to spoilage. Ability to follow written and verbal instructions, particularly standard recipes and detailed cooking instructions. Skill in operating and cleaning a wide variety of food service equipment, including special equipment for the preparation of large volume items. Skill in carving, preparing, garnishing, and assembling attractive platters, salads and other food presentations. FWS Allowances and Differentials This is a federal wage schedule (FWS) position. All FWS employees are entitled to overtime work for work in excess of 8 hours in a day or in excess of 40 hours in the administrative workweek, whichever provides the greater benefit to the employee. Incentives and Bonuses Incentives will not be paid. Non-Foreign Overseas Allowances Non-foreign overseas allowances, cost of living (COLA), and differentials will not be paid, contingent upon eligibility.
