JOB SUMMARY

Accountable for the overall success of sushi kitchen operations. Exhibits culinary talent by personally preparing sushi and other Japanese dishes while leading the staff and managing all food-related functions. Works to continually improve guest and employee satisfaction while maintaining the operating budget. Supervises all sushi kitchen areas to ensure a consistent, high-quality product is produced. Responsible for guiding and developing staff, including direct reports. Must ensure sanitation and food standards are achieved.

CANDIDATE PROFILE

Education and Experience

  • High school diploma or GED; 4 years of experience in the culinary, sushi, or food and beverage industry.

OR

  • 2-year degree from an accredited university in Culinary Arts, Sushi Arts, or related major; 2 years of experience in the culinary, sushi, or food and beverage industry.

CORE WORK ACTIVITIES

Ensuring Culinary Standards and Responsibilities are Met

  • Manages sushi kitchen shift operations and ensures compliance with all food & beverage policies, standards, and procedures.

  • Estimates daily production needs for sushi and communicates production needs to kitchen personnel daily.

  • Assists Executive Chef or Sushi Chef with all sushi bar and kitchen operations and preparation.

  • Prepares and prepares sushi, sashimi, and other Japanese dishes regularly or for special guests or functions.

  • Develops, designs, or creates new sushi dishes, presentations, and ideas.

  • Assists in determining how sushi and dishes should be presented, ensuring decorative and appetizing food displays.

  • Maintains purchasing, receiving, and food storage standards specific to sushi ingredients.

  • Ensures compliance with food handling and sanitation standards specific to sushi preparation.

  • Performs all duties of sushi kitchen managers and employees as necessary.

  • Recognizes superior quality sushi products, presentations, and flavors.

  • Ensures compliance with all applicable laws and regulations related to food safety and handling.

  • Follows proper handling and right temperature of all food products, especially raw fish and seafood.

  • Operates and maintains sushi bar equipment, such as sushi rolling machines, knives, and rice cookers, reporting malfunctions.

  • Checks the quality of raw and cooked sushi products to ensure standards are met.

Leading Sushi Kitchen Operations

  • Supervises and coordinates activities of sushi chefs, cooks, and other kitchen staff engaged in sushi preparation.

  • Leads shifts while personally preparing sushi and executing guest orders to the highest specifications.

  • Utilizes interpersonal and communication skills to lead, influence, and encourage others; advocates sound financial/business decision-making; demonstrates honesty/integrity; leads by example.

  • Encourages and builds mutual trust, respect, and cooperation among team members.

  • Serves as a role model to demonstrate appropriate behaviors for sushi kitchen staff.

  • Maintains the productivity level of employees and ensures they understand expectations and parameters.

  • Establishes and maintains open, collaborative relationships with employees and ensures employees do the same within the team.

  • Ensures policies are administered fairly and consistently, keeping a smooth workflow in the sushi kitchen.

  • Communicates performance expectations clearly and according to the role descriptions.

  • Recognizes success in performance and fosters an environment for excellent results.

Ensuring Exceptional Customer Service

  • Provides services that exceed customer expectations, focusing on quality and freshness of sushi.

  • Manages daily operations to ensure the quality and standards of sushi meet guest expectations.

  • Sets a positive example for guest relations, particularly in the sushi bar setting.

  • Empowers employees to deliver excellent sushi and customer service.

  • Interacts with guests to obtain feedback on product quality and service levels.

  • Handles guest complaints or issues related to the food and service, especially around sushi and dining experience.

Maintaining Culinary Goals

  • Achieves and exceeds set goals, including performance goals, budget goals, team goals, and sushi quality standards.

  • Develops specific goals and plans to prioritize, organize, and accomplish sushi kitchen work.

  • Utilizes the Labor Management System to effectively schedule kitchen staff based on business demands.

  • Trains employees in safety procedures, particularly in handling sharp tools and raw fish.

Managing and Conducting Human Resource Activities

  • Identifies the developmental needs of team members and coaches or mentors them to improve their sushi preparation skills.

  • Improves service by communicating guest needs and providing individual coaching as necessary.

  • Participates in employee performance appraisals, providing constructive feedback and guidance.

  • Brings issues to the attention of the department manager and Human Resources as necessary.

Additional Responsibilities

  • Provides information to supervisors, co-workers, and subordinates via telephone, email, or in person.

  • Analyzes information and evaluates results to solve problems and improve sushi kitchen operations.

  • Attends and participates in meetings related to sushi kitchen performance and improvements.
