Duration: 5 Months Shift Timings: 5:00 AM to 2:00 PM BG Check Required: Yes Job Description: Prepares and cooks food: Operates commercial/standard kitchen equipment (i.e. professional gas range, oven, steam jacketed kettle, steamer, deep fryer and floor mixer); Lifts and moves pots, lids, bowls and other containers regularly; Cleans and cuts produce and meat before cooking and mixing; Uses commercial utensils, many stored at chest level or higher; Removes food from coolers, freezers and storerooms; Accesses floor to ceiling shelving in all areas; Follows nutrition and presentation standards established by Food Service Manager or Supervisor; Reads and scales recipes according to demand; Follows best practices and makes production adjustments to meet demand and/or reduce waste and loss. Maintains food preparation standards: Follows cleaning and sanitation procedures as established by the Department of Health while preparing food; Knows, follows and tracks appropriate food temperatures; Tastes dishes; Discards inedible foodstuffs; Follows established cooking temperatures for meats and food dishes; Stocks and stores food according to best practices (e.g., FIFO - first in first out, shelf placement); Cleans work areas, equipment and utensils; Removes trash, cleans out coolers/shelves and accesses floor-to-ceiling shelving; Stores foodstuffs according to established procedures. Maintains foodstuffs and kitchen supplies: Maintains daily food production records; Coordinates food production estimates with Food Service Manager or Supervisor; Estimates food consumption (e.g., the amount of food required per person); Inventories stock on hand and records use and known loss; Participates in ongoing inventory assessment; Places and expedites orders as assigned by supervisor. Collaborates with team: Gives instruction for cooking, equipment use and sanitation practices to students and other staff as needed. Contributes to the overall effectiveness of the Food Service Department. Maintains professional and technical knowledge (e.g., attends professional workshops, participating in school in-services). Adheres to federal, state, and local sanitary Requirements: Follows best practices as established by Department of Health and National Restaurant Association. Required Qualifications: Formal education in arithmetic that includes addition, subtraction, multiplication & division; 3 mos. trg. or 3 mos. exp. in food preparation, sanitation & storage & use of food service equipment in institutional, school or restaurant setting. Or equivalent of the Minimum Class Qualifications for Employment noted above.
