Cold Spring Harbor Laboratory Assistant Director, Culinary Services in Cold Spring Harbor, New York

Position Description

Cold Spring Harbor Laboratory is seeking an Assistant Director of Culinary Services who will plan, direct, develop, and coordinate the activities of the Culinary Dining, Kitchen & Purchasing Services groups. This individual will oversee and interact with all software and business systems involved with Culinary services. In addition, they will provide cost and expense data as needed to develop and comply with annual budgets for all service locations.

Position Responsibilities

Initial Responsibilities:

  • Establishing financial systems in conjunction with F&B team and Finance
  • Ensuring that all of the Culinary applications integrate with the CSHL ERP and financial system
  • Creating a F&B P&L by each service location
  • Fine tuning (programming) POS (menu items, Price Look Ups(PLUs), Covers, pricing)
  • Scheduling to demand -Ensure the staff scheduling is efficient and productive
  • Writing job descriptions and defining org chart and areas of responsibility
  • Fine tuning and programming catering software to CSHL needs
  • Creating platform for purchasing of F&B product
  • Collaborating with procurement to ensure the most cost-effective purchasing of F&B products
  • Assisting with group purchasing initiatives
  • Managing product cuttings with goal of highest quality at lowest cost
  • Assisting with creation of culinary training materials (FOH & BOH)
  • Perpetual schedules i.e., pre-shift/ monthly meetings, ordering schedules, receiving schedules, quarterly vendor reviews etc....
  • Maintaining and updating all of the culinary software systems (POS, menu, pricing, PLU's etc)
  • Computer Software Knowledge:
    • Microsoft Office Suite (Outlook, Word, Excel, PowerPoint)
    • Caterease
    • Agilysys / EatecNet
    • SQL
    • Oracle / Symphony / Micros

Traits for individual:
  • Solid understanding of how F&B financial systems and operations work
  • Point Of Sale (POS) experience - setting up systems from the ground up as well as managing on-going systems
  • Multi-outlet management experience
  • Strong collaborator
  • Has applied change management skills to large projects with a proven track record in achieving results
  • Has developed project plans for multi-step, multi discipline projects
  • Strong communicator
  • Catering experience and experience using catering software
  • Culinary experience: Passionate about excellent food & courteous service
  • Ability to work for extended periods of time, on site
  • Solid interpersonal skills.
  • Thorough understanding of the integration of menu construction, food purchasing, production, staff management.
  • Proficient in scheduling, employee training- personal mediation
Position Requirements

EDUCATION:

  • Bachelor's degree in Hospitality Management required

EXPERIENCE:
  • Ten or more years of experience in hotels or clubs.

Supplemental Information

Compensation and Benefits:
The salary range for this role is $90,000-120,000. The salary range and/or hourly rate listed is a good faith determination of potential base compensation that may be offered to a successful applicant for this position at the time of this job advertisement and may be modified in the future. When determining a base salary and/or rate, several factors may be considered as applicable (e.g., years of relevant experience, education, credentials, and internal equity).
