Description

MAIN FUNCTION:

  • Does general cooking, in charge of given shift and other kitchen employees.

  • User role(s) information systems access as assigned, where applicable.

    ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Follows menu as to meal to be prepared. Records any changes of substitutes made.

  • Responsible for the preparation and cooking of all meals during their shift.

  • Supervises assistant cook(s) and food service workers and dishwasher in absence of Director of Nutrition Services, in regards to cleaning and other kitchen duties. Is in charge of a given shift.

  • Maintains high standards of safety and sanitation in the kitchen. May assist in cleaning and other routine kitchen tasks.

  • May be required to dispense food at counter or place food on plate, etc.

  • Prepares food in accordance with number of meals being served and according to menu requirements.

  • Requisitions food supplies as needed to Director of Nutrition Services.

  • Inspects kitchen to ensure proper preparation and utilization of food and to maintain high standards of sanitation.

  • May be required to train kitchen person in use of operation of dishwasher and other equipment.

  • Perform other duties as assigned and any task asked or required by the Director of Nutrition Services.

    COMPETENCY REQUIREMENTS:

  • Proficient in the preparation of a wide variety of food as dictated by the menu.

  • Proficient in the preparation of modified diet meals.

  • Proficient in the daily supervision of food service personnel.

  • Uses food thermometers properly and logs temperatures of foods prepared daily.

  • Records daily temperatures of refrigeration and freezer units and assesses if there are any malfunctions.

  • Proficient in maintaining sanitary and safety standards in the kitchen.

  • Good communication skills

  • Ability to perform simple math functions

    EDUCATION AND QUALIFICATIONS:

  • Three years’ experience in large scale cooking, one year of which must be included regular supervision of subordinate employees.

  • High School Diploma or Equivalent

  • Must be able to read, write and speak English.

    PHYSICAL DEMANDS:

    The physical demands described here are representative of those functions that must be met by an employee to successfully perform the essential functions of this job.

  • While performing the duties of this job, the employee is regularly required to twist, bend, push, pull, lift, kneel, reach, stoop, and climb stairs. This position is very active and requires standing and walking all day.

  • The employee is frequently required to use hands to grasp or feel and occasionally lift up to 40 pounds.

  • The worker is required to have visual acuity to determine the accuracy, neatness and thoroughness of the work assigned and makes general observations.
