We are looking for skilled and self-motivated sous chef's who enjoy the high pace atmosphere of a large scale food and beverage operation.
Full-time hours are available in the mornings and evenings and pay is highly competitive.
This position is second in command in the kitchen. This manager ensures that all food production workers are performing their duties as prescribed by the quality standards established by the Executive Chef. Assists the Executive Chef with administrative duties which include but are not limited to, supervision of the culinary staff, ordering, staff scheduling, inventory and invoice processing. The Sous Chef assumes all duties of the Executive Chef in his/her absence or whenever deemed necessary. The Sous Chef must be a self-starting, enthusiastic and creative person with a true passion for their craft and must feel comfortable interfacing with members to discuss special needs and occasionally participate in member cooking classes. Exhibits professionalism and respect with members, guests and fellow employees at all times.
Job Duties and Tasks:
In order to provide the highest level of service to the members and owners of the Club the Sous Chef will perform the following:
Meet the obligations of the JR Mission Statement Objectives
Participate in training and supervising all Culinary and Utility personnel
Ensure all Culinary employees are well groomed and in proper uniform at all times
Ensure all Culinary employees are trained in and practice proper telephone etiquette
Prepare daily specials as established or assigned by the Executive Chef
Complete quality control line check for each meal period
Supervise kitchen preparation of all stations and the production of all food
Verify that all portion sizes, quality standards, department rules, policies and procedures are maintained by kitchen employees
Assist with the purchasing and processing of all food and food related items
Assist with purchase all F&B related paper items for the club F&B operation
Maintain exceptionally high and consistent food quality and value
Work as expediter for the kitchen as needed
Perform line and/or prep responsibilities as required
Supervise all on-course food preparation and operations
Supervises ongoing cleaning and work schedules for employees
Provide input regarding functions, menus, policies, etc.
Assist in planning and execution of club events
Attend any meetings held regarding food and beverage planning when necessary
Participate in all Culinary departmental meetings
Participate in Culinary employee counseling and disciplinary sessions when needed
Research and develop ways to reduce budgeted Cost of Sales while ensuring quality and value
Maintain County Health Department Sanitation and Licensing requirements
Respond to member complaints about food on a timely basis
Contribute to menu development for a la carte meals in all club areas
Stay current on latest F&B trends
Maintain working inventory of all equipment for culinary operations
Assist with monthly food product inventories
Maintain organized and secure culinary storage areas
Maintain efficient and effective purchasing and storage for all food products
Coordinates buffet presentations and needs with FOH
Reports all member and guest complaints to the Chef to assist in resolving them
Submit ideas for future goals, operational improvements and personnel management to Executive Chef
Compensation, Schedule and Benefits:
$25-$29 per hour DOE with potential for bonus pay
Full-time, Monday-Friday (weekend availability), Day/Night shifts (flexible schedule)
