Job Summary:
Service is the foundation of everything we stand for at Vail Resorts, and our Food and Beverage team is no exception to creating this experience of a lifetime. Assistant Managers are an integral part of restaurant operations responsible for overseeing daily operations, promoting teamwork, quality, and safety to ensure an exceptional dining experience for our guests. This role oversees all FOH operations for Eagle and the Owl Full-Service Restaurant.

This is an evening location at the base of Roundtop located on the third floor of the Main Lodge. The 108-seat full-service restaurant is open for the ski season offering fast-casual dinner options and a full bar during the season. The menu features Burgers, pizzas, and has a laid-back Ski bar dining experience.
Expected Pay Range: $25.00 - $29.55

Job Responsibilities:
Proficient in all positions in the kitchen and front of house, with an in-depth knowledge of culinary techniques.
Actively facilitates strategic priorities.
Punctual, in proper uniform including non-slip shoes and designated uniform. Is the model for all grooming standards. Abides by and upholds overall standards of customer service standards.
Demonstrates an upbeat and positive attitude. Interacts and communicates professionally with staff and management.
Responsible for training, supervision, and effective communication of standards to all direct reports. Ensuring all FOH & BOH staff members are properly trained in all duties, including knife training, and have obtained liquor & Food Handlers certification. Organizes kitchen and maintains all Serv-Safe documentation.
Responsible for all food & beverage orders to maintain proper par levels and costs while providing fresh, quality products, inspecting all current products for freshness, and proper documentation of any waste.
Implements and leads proper receiving procedures; including proper FIFO rotation & dating of all incoming products.
Monitors food portioning, preparation, and waste to control COG. Ensures plate portioning and presentation are consistent.
Works with Senior Management on new menu ideas. Responsible for cost-outs. Demonstrates food quality expectations by preparing all dishes correctly and training and monitoring all those who prepare food items.
Aligns with Senior Management on proper scheduling of all FOH & kitchen staff to hit budgetary goals by anticipating business levels and eliminating all OT, while maintaining the high standards of a safe, quality product and service in a timely manner.
Participate in leadership forums providing feedback and input on dining operations, training, and continuous improvement opportunities.

Job Requirements:
High School Diploma or GED equivalent required; Bachelors or Culinary degree preferred
RAMP & SERV Safe certification or regional equivalent required
3-5 years of restaurant experience, 1+ years of supervisory experience required
Ability to stand and walk continuously throughout a shift, lift, and/or carry up to 50 lbs.
Ability to work a flexible schedule including nights, holidays, and weekends
Must be able to communicate fluently in English; bilingual preferred
The expected pay range is $25.00 - $29.55. This is the pay range we reasonably expect to pay for this position. Individual compensation decisions are based on a variety of factors.
